DON’T WASTE, DRINK! #5 – Manhattan Cocktail


Enjoy a Manhattan cocktail? Prepare a batch and you’ve got 9 ready to serve!

Arguably one of the most important drinks in cocktail history. This session we will be creating a bottled cocktail using waste cherry stones. Perfect if you’re entertaining guests or are likely to want more than one yourself.

Making the Manhattan

You will need:

  • Leftover cherry stones (at least 10g to start with). Leftover cherries can also be added.
  • Digital scales
  • 400g bourbon or whiskey of your choosing
  • 100g sweet vermouth
  • 9g aromatic bitters
  • A small saucepan
  • A bowl that will sit on top of the saucepan
  • 200g Filtered water
  • Coffee filters
  • A sterilised bottle or Tupperware pot that will hold 700ml

Step 1.

The next time you have cherries, keep the stones to one side. Store in a freezer bag until needed.

Step 2.

Next, we’re going to use a bain-marie or double boiler to infuse vermouth with flavour from the cherry stones. Fill the saucepan with enough water so that it will touch the base of the bowl when placed on top. Bring the water to the boil then reduce the heat to a simmer. Place the bowl on top of the saucepan and pour in your vermouth. Add the fruit stones and allow to infuse for 50 mins.

Step 3.

Allow the vermouth mix to cool and then strain off the cherry stones through a coffee filter. Combine with your whiskey, bitters and water in the sterilised bottle. This can be stored in the freezer until you are ready to serve. The alcohol will prevent the liquid from freezing fully, whilst keeping your cocktail perfectly chilled. If you have whole cherries leftover you can preserve them in some of the cocktail until needed and use them for garnish.

Bonus Points

winter spices

  • Add winter spices like cinnamon or nutmeg to your vermouth when infusing
  • Split the vermouth with another liqueur like cherry brandy or triple sec
  • If you have less of a sweet tooth use a dryer vermouth alongside your sweet.
